Pumpkin Chocolate Chip Cookies

Pumpkin Chocolate Chip CookiesWith the weather cooling off, and autumn officially here, I figured it was time to make a batch of Pumpkin Chocolate Chip Cookies! They are super yummy and put me in the fall spirit!

½ cup butter or margarine, softened
1 egg
1 cup pumpkin
1½ cup sugar
1 tsp. cinnamon
1 tsp. vanilla
1 tsp. baking powder
1 tsp. baking soda
2½ cup flour
1 cup mini chocolate chips

Preheat oven to 350 degrees.

In a large bowl, cream together butter and egg. Beat in pumpkin and sugar. Add cinnamon, vanilla, baking powder, baking soda, and flour and mix until blended. Add chocolate chips.

Drop by teaspoonful onto a Pampered Chef Round Stone (or well-greased cookie sheets). Bake until light brown, about 15 minutes. Remove from stone to cool.

The recipe says it will make 6 dozen cookies, but I usually only end up with about 4 dozen. I must make them a little bigger than I should!
